Performance tested Japanese Black bulls were ultrasonically scanned from the end of testing to 80 months of age at intervals of about 10 months to clarify the changes with passage of time in carcass traits such as fat thickness, M. longissimus thoracis area and marbling score between the 7th and 8th ribs. The possibility of prediction of the carcass traits at 20 months (Stage II) and 40 months (Stage III) of age was discussed in this study by using the scanned carcass trait estimates at 14-16 months of age (Stage I) and body measurements obtained at the end of performance testing. Fat thickness estimates ranged from 13 to 18mm in most bulls through the experimental period. The changes in M. longissimus thoracis area estimates were well fitted to the Logistic growth curve and increased to the estimated mature size (46.5-53.1cm2) on 50 months of age following the function. A large variation was found among bulls in the growth pattern of their marbling score. Some bulls showed a high level of intramuscular fat deposition at early (20) months of age. In most of bulls this trait increased to the expected mature level (2.0-3.9) on 50 months of age following the Logistic function. Multiple regression analyses suggested that carcass traits at Stage II and III can be predicted by use of ultrasonic estimates of carcass traits and body measurements at Stage I with contribution rates of 78.6 and 73.1% for fat thickness, 90.1 and 81.1 % for M. longissimus thoracis area and 72.9 and 53.9% for marbling score, respectively.
