Supplementation of copper (Cu) to nonruminants above their recommended requirement has been shown to decrease plasma and breast muscle cholesterol concentrations in poultry (Bakalli and Pesti, 1994) and decrease the saturated to unsaturated fatty acid ratio in swine adipose tissue (Amer and Elliot, 1973). In ruminants, Cu supplementation to diets marginal in Cu led to an increase in adipose cell volume and lipolytic rate in sheep (Sinnett-Smith and Woolliams, 1987) and decreased backfat depth and increased rib eye area in cattle (Ward and Spears, 1997). Therefore, the present studies were conducted to determine the effects of dietary Cu source and level on lipid and cholesterol metabolism in beef cattle.
