Electrophysiological methods were used to examine the effectiveness of odours from chopped samples of foods of plant and animal origin in stimulating different types of olfactory receptors in adults of Periplaneta americana (L.). The sense cells occurred in certain fixed combinations in particular sensilla, and provided a classification of sensilla based on their responses. Two-celled sensilla included pentanol, octanol, hexanol and alcohol-terpene types; three-celled sensilla comprised the butyric acid type; and four-celled sensilla included cold-hexanoic acid type and amine type sensilla. The responses of the various cell types in the different sensilla to different foods are described. Each of the receptor types responded to several kinds of food, and no receptor was observed to respond specifically to one kind only. It is suggested that the recognition of food odours depends not on the detection of key odours but on the complicated patterns of excitation in the receptors of different types that arise from differences in the combination of unspecific odour components.
