Longitudinal relaxation times (T1) have been used to assess changes in muscle water as rig or developed in both rat and beef muscle. A significant correlation between the initial rise in T1 and the slope calculated from T1 values measured post rigor was observed. Changes in T1 and thus water structure seem to be very sensitive to pre-rigor events such as pH fall.
