smallcap˜D- and smallcap˜L-isomers of lactic acid were separated by HPLC using an enantiomeric resolution column (TSK-gel Enantio L1,Tosoh, Tokyo), and the isomers produced by lactic acid bacteria were determined more easily and quickly compared with an enzyme method. In addition, lactic acid types were characterized in order to identify lactic acid bacteria.
