The methods of sugar extraction and analysis employed are described in detail. The pattern of sweetening of potato tubers at 2 C could vary with their age when placed at this temperature, though not necessarily so. Gradual reduction of the storage temperature to 2 C, in contrast to rapid cooling, resulted in a marked reduction in the amount of sucrose accumulated in the one sample in which gradual cooling was studied. Alternating periods of storage at 2 and 10 C reduced sprout growth much below that at 10 C and sugar accumulation much below that at 2 C. A daily period of 16 h at 2 C prevented growth completely, though with a little sweetening. Reducing the period at 2 C to 8 h prevented sweetening, except in senescent tubers, though with a little growth.
