[目的] 器 (うつわ) と盛りつける料理との組み合わせを巧みに利用した繊細な表現技法は, 日本料理の大きな特徴の一つである. 盛りつける食器の選択, 盛り付ける量, 盛り付け方といった視覚的要素は, 料理の味わいを高め, おいしさや感動を増幅させるために不可欠であると考えられる. 本研究では, 食器が料理の味わいに及ぼすクロスモーダル効果について検討した.
