This paper presents scientific evidence on the importance of the omega-6/ omega-3 fatty acid ratio at the molecular level. In the study, insertion of a missing delta-3 desaturase in cardiac myocytes and cancer cells in culture led to the production of 18:3ω3 from 18:2ω6, and in the formation of eicosapentaenoic acid from arachidonic acid. This process proceeded until the ratio between omegea-6 and omega-3 reached 1:1. These results suggest that a low or balanced omega-6/omega-3 fatty acid ratio exerts a beneficial effect in different cell types (i.e., decreased susceptibility of heart cells to arrhythmia, increased apoptosis of cancer cells).
