Thermoanalytical investigation on the coagel-gel-liquid crystal transition in some water-amphiphile systems

Thermoanalytical studies on the binary systems of water and amphiphiles such as surfactant (octadecyltrimethyl ammonium chloride and potassium stearate) and lecithin (dipalmitoyl phosphatidylcholine) revealed the stepwise decreasingTctransition curves, due to the so-called chain-melting, with increasing water content. Detailed and careful annealing treatment for the samples indicated the existence of a new phase transition corresponding to the so-called coagel-to-gel at a temperature below theTccurves. For this transition, we proposed the symbolTgelcurve shown in the phase diagram. Furthermore, the interrelationship between theTgeltransition and the ice-melting phenomena was examined precisely and the predominent roles of ‘newly incorporated water (intermediate water)’ between the bilayers of the amphiphilic molecules at theTgeltransition was pointed out.
