Termitomyces are a group of agarics associated with termite nests in central Africa. The genus is distributed throughout equatorial and southern Africa and south-east Asia. Use of the genus as food is discussed with reference to Thailand, Malawi, Zambia, Nigeria and Burundi. Three recipes for Termitomyces are presented as well as a details on the preparation method for fresh Termitomyces and its preservation in brine.
