The presence of additives such as electrolytes in wateroil-water (w/o/w) multiple-phase emulsions is known to influence their stability (1, 2). An important factor in determining the stability of w/o/w emulsions appears to be the osmotic pressure difference acting across the oil phase layer separating the internal and external aqueous phases, created by the presence of electrolytes or other components.If the osmotic imbalance is extreme, the internal water appears to be lost rapidly to the external aqueous phase by rupture of the oil layer. At lower concentrations of electrolyte, however, water may be transported between the aqueous phases resulting in either shrinkage or enlargement of the internal aqueous droplets depending on the direction of the osmotic gradient. This is manifested in a change in size of the" multiple"(oil) drop which entraps the aqueous droplets. A convenient method for measuring water transport in w/o/w emulsions using a Coulter Counter was described by Davis and Burbage (3). This involved determination of the size distribution of the multiple drops in aw/o/w emulsion over a period of time.
