There has been significant growth in the use of complex geometries in rotational rheometry over the last decade. This article reviews the recent technical advances in both the theory and application of such geometries in the rheological measurement of fluid foods. Applications reviewed include the rheological characterization of complex fluids, scale-up analysis and the simulation of mixing or reactor unit processes. Novel techniques to overcome the principal limitation associated with use of complex geometries, namely ill-defined shear rates, are discussed in detail. Obtaining rheological measurements using complex geometries offers numerous benefits in fluid food analysis, facilitating improved product characterization and the provision of previously unmeasurable data.
