This review presents properties and examples of three structurally distinct classes of enzymes called phytases. These three classes include representatives of histidine acid phosphatase, beta propeller phytase, and purple acid phosphatase. The term "phytase" has become so broad that it includes several structurally different enzymes. It is likely that additional classes of enzymes will be found to have phytate degrading properties and also be labelled as phytase.
