The antioxygenic action of quinone with phos-phoric acid in delaying fat autoxidation has been investigated. From the experimental data a scheme has been proposed, which involves both adsorption and solution reactions and which is based upon an exchange mechanism. The scheme also explains the effectiveness of various organic acids and other synergists in the stabili-zation of vegetable oils and fats which contain phenolic inhibitors or their oxidation products.
