A large part of calcium, magnesium and inorganic and organic phosphate in cows'milk is bound to the casein micelles. Two models in which it is postulated that micellar calcium phosphate (MCP; =P i + divalent cations associated with P i ) is a solid phase that resembles a given mineral calcium phosphate, and two models in which it is postulated that casein binds the ions as small complexes, are discussed. The results of experiments concerning the nature of MCP described in the literature were tested against these 5 models
