Purpose: Swallowing is defined as taking a substance through the mouth and pharynx and passing it through the cricopharyngeal construction and esophagus and into the stomach. Mastication is the process by which food is held, chewed, and moved within the oral cavity, in preparation for swallowing. Examination and diagnosis of masticatory function and swallowing function is indispensable for evidence-based prosthodontic treatment. Previous articles concerning this issue were reviewed to consider the functional test of mastication and swallowing, suited in a society composed largely of elderly. Selection of study: Classic articles cited in textbooks, recent articles searched from Medline and Journal of Japan Prosthodontic Society were selected and reviewed in the separate categories with different objectives of assessments. Results: Masticatory function has been evaluated by questionnaires or personal interviews designed to subjectively assess an individual's chewing ability and by clinical functional tests to provide more objective information about masticatory efficiency. Such objective tests included fractional sieving tests and analyses of mandibular movement and of masticatory muscle activities during chewing. Most currently available methods are sensitive enough to assess target functions. However the function assessed by each method is a part of masticatory and swallowing function. Conclusions: Establishment of a examination and diagnostic system for masticatory and swallowing function requires an understanding of the objectives of individual measurements and construction of systematic examinations based on these available measurements.
