Preliminary data on the phytate levels of staples common to Nigerian diets including beans, tubers, fruits, vegetables, and some fermented foods are presented. The phytate levels in these foods were determined by the recently described Harland/Oberleas AOAC-approved method and are higher than previously reported. Estimations of phytate intake in a "typical" Nigerian daily diet are on the order of 2200 mg/day. Nigerian diets appear to contain three times the phytate found in the diets of North Americans or residents of the British Isles.
