MATERIALS AND METHODSMaterials and Reagents Wheat (Triticum aestivum L.) starch granules were prepared by the acetic acid fractionation technique (Sollars 1958). Barley (Hordeum vulgare L.), maize (Zea mays L.), rice (Oryza sativa L.), prosomillet (Panicum miliaceum L.), chestnut (Castanea crenata Sieb, et Zucc.), acorn (Lithocarpus glabra (Thunb. ex Murray) Nakai), tapioca (Manihot utilissima Pohl.), and potato (Solanum tuberosum L.) starch granules were purchased from commercial sources.
