考虑到番茄成熟过程中表面颜色的变化与色素的产生有关，本研究旨在通过测定番茄成熟过程中表面颜色的变化，探讨番茄成熟过程中颜色形成与色素产生之间的关系。结果表明，果皮径向壁上的特殊点是果皮表面颜色发生变化的主要原因。接着，通过假设胡萝卜素含量恒定来计算叶绿素和番茄红素的变化率。计算值与提取值的变化趋势基本一致。这一结果表明，色调是适合的颜料生产的分析。【关键词】番茄，农产品，表面色泽，后熟，测色，色素生成，次生代谢
Considering the surface color change in ripening of tomatoes the color appearance by the production of pigments, the purpose of this study is to examine the color appearance mechanism by measuring the surface color change, to find the relationship between the color development and the production of pigments. As the results, it was found the surface color changed from the special points upon the radial wall of the pericarp. Next, the changing rate of the chlorophyll and the lycopene were calculated by assuming that the carotene content was constant. The calculated values showed the similar tendency to the extracted values of the pigments. This result is suggested that the hue was suitable for the analysis of the production of pigments.
