The role of the diet in promoting overeating and obesity has been the subject of considerable interest. The degree to which dietary factors stimulate overeating in humans is difficult to establish with certainty because of the many factors that influence human food intake. Research with laboratory animals, however, clearly demonstrates that certain diets induce overeating and obesity. These diets include: high-carbohydrate diets, high-fat diets, and mixed diets containing a variety of fat-and sugar-rich foods, that is, the “supermarket” or “cafeteria” diet. As reviewed in several publication^,'-^ the effects of these dietary regimes on food intake, body weight, and body fat depend on a number of variables, including the strain, age, and sex of animals studied. This paper will focus on new findings concerning the orosensory and physicochemical properties of food that promote overeating in laboratory rats and the role of diet palatability in this effect. Note that the emphasis here is on overeating rather than obesity; dietary manipulations that produce obesity in the absence of overt hyperphagia will not be discussed.
