Pulsed NMR measurements of the transverse relaxation behaviour of the protons in striated muscle (frog) are reported together with NMR studies of the freezing of the water in such tissue. The results are interpreted in terms of the existence of three fractions of water: one (approx. 20%) strongly bound to protein and which does not freeze; the second (approx. 15%), water in the extracellular spaces and the third (approx. 65%), the remainder of the water in the myofibrils and sarcoplasmic reticulum.
