This chapter summarizes knowledge about the generalized stress response in fish and possible biological and nutritional actions of astaxanthin (ASX), a typical polar carotenoid, on fish. This is because carotenoids are unique natural pigments, which have many kinds of biological activities in animals. Exposure of organisms to stressors may result in a series of biochemical and physiological changes. These changes are mediated by the neuroendocrine system at the organismal level. Carotenoids are one of the most common classes of pigments that occur in nature. They occur in three domains of life: eubacteria, archaebacteria, and eukaryotes. A variety of sources of dietary carotenoids have been applied for coloration of fish. The sources of carotenoids often used in aquaculture are synthetic ASX, red yeastP. rhodozyma, green microalgaeHaematococcus pluvialis, krillEuphausia superba, algaSpirulina spp., crustacean meal, red pepper paprika, marigold flowers, etc.
