The mammalian liver plays a key role in dealing with ingested nutrients. Feeding of a diet high in simple carbohydrates and low in fats induces the expression of a set of genes in the liver. These genes encode key enzymes in the conversion of glucose to triacylglycerols (Figure 1).‘Lipogenic’enzymes that have been shown to be induced by carbohydrate feeding include enzymes of glycolysis, such as pyruvate kinase, enzymes of fatty acid synthesis, such as acetyl-CoA carboxylase, and enzymes of triacylglycerol formation, such as glycerol-3-phosphate acyltransferase.
