This retrospective analysis helped determine the extent of trading of food by first- and fourth-graders during school lunch from a study using observations to validate the accuracy of children's lunch recalls. Trading was defined as giving away or receiving food from school lunch for an individual child. A sample stratified by gender and ethnicity (White, African American) of 48 first-and 48 fourth-graders was randomly selected from two public schools during one year. Each child was observed once while eating school lunch. Fisher's Exact Test (two-tailed) indicated a significant difference between the probability of trading by grade (p < 0.005). Two first-graders (4%) traded 2 foods; 13 fourth-graders (27%) traded 16 foods. Results indicated that more fourth- than first-graders traded, most foods were traded as full servings, and trading would cause errors if Visual estimation of plate waste without entire meal observation was used to validate the accuracy of children's lunch recalls. 2001 Elsevier Science Inc.
