This book, sponsored by the Nutrition Subdivision of the Division of Agricultural & Food Chemistry of the American Chemical Society, gives a broad overview of the topic of bioavailability of iron, with special emphasis on topics of concern to food producers. The 12 chapters organize information on the complex interactions in the man/food/nutrient chain, including determination of Fe availability in foods, changes in availability caused by food processing, and additives which enhance (e.g. ascorbic acid) or inhibit (e.g. fibre in cereal-rich diets) the uptake of Fe. Chapter 12 is on Bioavailability of iron and other trace minerals from human milk, by C. W. Weber, L. A. Vaughan & W. A. Stini (pp. 173-181, 34 ref.).
