The mast cells of rat contain an active pro-teolytic enzyme that hydrolyzes casein, albumin and insulin. It has an alkaline pH optimum, and its esterase activity is homospecific with chymotrypsin. The enzyme (mast cell chymase) is present in active form in characteristic large granules of the mast cell along with heparin and histamine. A second enzyme (mast cell tryptase) is present in mast cells of the dog and human which is homospecific with trypsia.
