Low temperature during storage and transit is the essential environmental factor in modern marketing systems. Cold suppresses diseases in two ways, by inhibiting growth of microorganisms and by maintaining host resistance by delaying senescence. Benefits from low temperature are reduced by limitations in facilities and equipment and by the susceptibililty of some commodities to low-temperature injury. Atmospheres low in oxygen or high in carbon dioxide, or both, are highly beneficial in extending the physiological life of adapted commodities. Modified atmospheres suppress postharvest pathogens primarily by extending the period of host resistance. A direct suppression of pathogens is possible using high levels of carbon dioxide for the few commodities that are especially tolerant of the gas.
