The nervous system is capable of fully processing only a small fraction of the information typically impinging on the sense organs at any moment. Attention provides an important mechanism for selecting some information to be processed extensively, albeit often limiting the processing of other information. Two main questions are: Can attention be directed toward particular stimuli within a single modality, for example, toward sweet-producing versus sour-producing gustatory stimuli? Can attention be directed toward a particular chemosensory modality, for example, toward gustatory versus olfactory constituents of flavors? Evidence suggests that people have at least some ability to attend selectively to particular chemosensory modalities and flavor stimuli. Selective attention to a single modality may reflect the preferential monitoring of neural activity in that modality, whereas selective attention to particular stimuli within a modality may represent preferential monitoring of neural activity of those neurons in the modality that are most sensitive to the attended stimuli.
