沖縄県は、成人において全国と比較して肥満が高く、生活習慣病該当者が多い。また、学校保健統計（平成30年度）によると、沖縄県の肥満傾向児の割合が6歳の時点ですでに全国よりも高く[沖縄男子5.02%（全国男子4.51%）、沖縄女子5.51%（全国女子4.47%）] 、沖縄県の肥満改善のための食育活用が急務となっている。本研究では、6歳未満の幼児とその保護者を対象に、食事摂取の質向上を目指し、食育プログラムの開発と無作為化介入試験を行う予定である。令和3年度（1年目）は、研究フィールドである食育プログラム開発に協力可能な保育所（4～5カ所）を選定し、生活に関する質問票の作成（種々の交絡因子を含み、健康指標として自覚症状および主観的健康感、家庭内コミュニケーション、家族構造などの人口統計学的要因、社会経済状態、生活習慣などの内容等）する予定であった。また、保護者と幼児を対象とした食育プログラムを栄養学の専門家を交えて開発する予定であったが、新型コロナウイルス感染症の流行により、保育所の協力を得られる状況ではなかったため、研究を遂行できなかった。令和4年度は、本研究を本学の人を対象とする生命科学・医学系研究倫理審査委員会に申請し、コロナ禍においても実現可能な研究状況を整備していく。また、1年目に実施できなかった協力可能な保育所の選定、栄養学の専門家と相談し、生活に関する質問票の作成や介入試験で実施する食育プログラムの開発を行い、無作為介入試験前の準備を行っていく。令和3年度、令和4年度共に、新型コロナウイルス感染症の流行に伴い、研究を遂行することができなかった。令和5年度は、新型コロナウイルス感染症が収まりつつあるため、早急に研究に取り組んでいく予定である。
