食生活の多様化が進む今日、狭義の栄養教育にとどまらない、より多面的な食育を実践し、個人および社会双方にとって、持続可能でより良い食生活を自ら創造するために必要な資質・能力の総体「フードリテラシー」を育成することが世界的に求められている。しかしながら、国内においては、フードリテラシーの概念自体、未だ浸透しておらず、食育の効果の検証も依然として遅れている。本研究は「フードリテラシーの国際的実態の解明と評価尺度の開発」をテーマとし、人々が身につけるべきフードリテラシーの内容を整理・体系化し、これまでほとんど報告されていない国際比較調査によりフードリテラシーの実態を明らかにし、汎用性のある評価方法を開発することを目的とする。当初の研究期間は3年であったが、新型コロナウィルス感染症拡大の影響により、研究期間を延長した。R3年度は、主に以下を実施した。国内の大学生および幼児を対象に予備調査を実施し、その結果については、2か所の国際学会で口頭発表を行い、報告した。これらの国際学会では、海外の研究者と国際比較調査のための打ち合わせ及び情報収集も行い、さらに新たなネットワークの構築にもつながった。尺度開発のための質問紙調査について倫理審査を受審し、承認を受けた。調査の準備・実施や結果分析のための時間をさらに増やすため、バイアウト制度を活用した。本調査を後期に調査を実施する予定であったが、コロナ禍の影響が依然として続いたことと、協力機関の都合もあり、次年度に実施することになった。一方で、尺度の有効性の検証に用いるため、発達段階を考慮した教育・介入効果の検証に適する教材を整備した。
