1.家計の食料需要の構造変化は,家計属性に規定される実効価格と市場価格の乖離によるとの仮説を、1975年から1994年までの家計調査・消費支出データと消費者物価指数データに,対象食料費目とそれ以外の消費支出費目に2分割したロッテルダム・モデルに,A.Bartenのscaling法を適用し,各費目の市場価格を実効価格に調整する調整関数を組み込んで検証した.調整関数は,世帯人員数(世帯規模変数),世帯収入に占める妻の収入割合と女子の実質賃金率(調理時間の機会費用変数),電子レンジ普及率(調理関連資本ストック変数)である.2.計測結果から明らかにされた実効価格と市場価格の乖離方向,乖離をもたらす説明変数は次の通り.(1)世帯人員数の減少に伴い,塩干魚介,魚肉練製品、調味料では実効価格が市場価格を上回り、生鮮果物,果物加工品,コーヒー・ココアでは下回る.(2)世帯収入に占める妻の収入割合の上昇によって,大豆加工品と酒類では実効価格が市場価格を上回り,他の魚介加工品,他の野菜・海草加工品,茶類では下回る.(3)電子レンジの普及に伴って,生鮮肉,加工肉,果物加工品では実効価格が市場価格を上回り,めん類,牛乳,卵,乾物・海草,生鮮果物,菓子類では下回る.(4)女子の実質賃金率の上昇が,生鮮魚介、他の魚介加工品,菓子類の実効価格を市場価格より高めると同時に塩干魚介の実効価格を市場価格より低下させた.3.各費目に含まれる食料品目の性格が様々であるため,これらの結果には直感的に理解できないものもある.また,計測モデルの説明変数では捉えられない需要の趨勢的変化も認められた.今後,家計生産に係わる説明変数を増やし,各品目レベルまでブレーク・ダウンした消費・価格データを用いて分析を行いたい.
