Comparative studies on the change of food consumption structure and behavior in a rural town during the lat thirty years.

在近30年的时间里，对爱元县岩崎镇居民进行了三次营养调查，分析了食物消费结构的变化规律及其与几种疾病的关系。结果如下：(1)采用主因子法对37个食品组的数据进行多因素分析，提取出3个因子。第一是辅食摄入的量，第二是以面包为主食的习惯，第三是辅食摄入的质量。(2)第一个和第三个因素的得分从第一次调查到最后一次调查都有所增加，这表明近30年来辅助食物摄入量和肉类/豆制品的数量有所增加。然而，第二个因素的得分并没有改变，可以说大米作为主食的作用仍然很重要。(3)食物摄入与健康的关系分析表明，贫血不仅是由营养不平衡引起的，而且是由日常生活活动过多引起的，高血压与衰老和肥胖有关。此外，值得注意的是，超重男性在第一个因素上得分更高。

Nutrition surveys were performed for the inhabitants in Ikazaki-town, Ehime Prefecture, three times during the last thirty years and the changing pattern of food consumption structure and its relation to several disorders were analyzed.Results were as follows:(1) Multivariate analysis, using Principal Factor Method, was made on the data obtained on 37 food groups, and consequently three factors were extracted.The first factor was the amount of subsidiary food intake, the second was the habit of taking bread as one of the staple foods, the third was the quality of subsidiary food intake.(2) Both scores of first and third factors have increased for first survey to the last, and this indicates that the amount of subsidiary food intake and meat/soybean-product has increased during the last thirty years.The score of the second factor, however, has not changed and it can be mentioned that the role of rice as staple food is still important.(3) The analysis of relationship between food intake and health showed that anemia is caused not only by unbalance of nutrition but also by excess activity of daily living and that high blood pressure is associated with aging and obesity.Moreover, it is noticeable that overweight males have higher score of the first factor.
