今年度は,昨年度に実施した外食・中食企業に対するアンケート調査の結果を踏まえてフィールドワークを行った。まず,契約栽培や農業参入を実施している外食チェーン数社に対してインタビュー調査を実施し,生鮮野菜の調達方法,契約栽培・農業参入の経緯,受発注の仕組み,需給調整,産地側への要望等を明らかにした。次に,それらの外食チェーンと契約栽培に取り組む産地での聞き取り調査を実施し,外食チェーンと直接取引を行う産地への影響やその対応を明らかにした。さらに,外食チェーンが農業参入を実施している産地でフィールドワークを行い,地域の変化を統計も踏まえて検討した。以上の調査の結果,外食チェーンは,品質や価格の不安定性,コールドチェーンの不確立,リードタイムの長さなどの既存の生産・流通システムにおける問題を克服するために契約栽培や農業参入に乗り出したことが指摘できる。また,外食チェーンが持つ業態特性と野菜の商品特性から,両者の間に「数量の懸隔」と「規格の懸隔」が生じていた。「数量の懸隔」に関しては,余剰のリスクを産地が,欠品のリスクを外食チェーンが分担し,「規格の懸隔」は産地側が複数の業態と取引をすることによって解決していた。すなわち,従来は中問流通が担っていた機能とリスクを外食チェーンと産地で二極分担することで新たな生産・流通システムを成立させていることが明らかとなった。他方,外食チェーンの農業参入は,地域での生産品目の変化や農業産出額の増加などの効果をもたらす一方で,産地に大きなリスクを抱えさせていることが判明した。なお,昨年度までの研究成果を学術雑誌(E-journal GEO)に発表し,今年度の研究成果を日本地理学会において報告した。

The commercial characteristics and commodity characteristics of wild vegetables are different, and the "quantity and gap" and "specification and gap" are different. "Quantity of suspension" is related to the origin of the surplus, the shortage of goods is related to the distribution of food,"specification of suspension" is related to the origin of the plurality of commercial procurement. The new production and circulation system is established in the middle of the production and circulation system. The agricultural participation of the foreign food industry in China is different from that of other countries in terms of production and agricultural output. Last year's research results were presented in the E-journal GEO, and this year's research results were presented in the Geographical Society of Japan.
