介護福祉士の資格を取得するために介護福祉士養成施設へ進学するのは、高校卒業直後の若年者が多い。全般的に生活能力が乏しいと考えられる学生が、高齢者や障害者の食の支援をするにあたり、家政学の栄養・調理の分野で優先的あるいは重点的に学習すべきポイントを模索したいと考えた。そこで、昨年度、介護福祉士養成施設の在学生を対象に行った調査を踏まえ、今年度は学生の食生活の現状を把握する目的で2種類の自記入式アンケートを福岡市内の養成施設3校(短大1校、専門学校2校)の1年生109名を対象に行った。有効な回答が得られた105名(男子56名、女子64名)の食生活と健康に関するアンケートと食物摂取状況調査を検討した。食生活と健康に関するアンケートは「介護福祉のための家政学」(中川英子編著・建帛社)に収載されているワークシートを用いた。また、食物摂取状況調査は厚生省・健康の指標策定委員会の食物摂取状況調査票を用い、食品群ごとの摂取頻度やエネルギー、栄養素等摂取量を検討した。【学生の現状】食事時間が「決まっていない」、食事の量を「考えない」、「欠食する」などの割合が30%前後であることや多くの学生が貧血症状やだるさを感じていることが把握できた。「食べない」という回答の多い食品は牛乳・乳製品、野菜、果物、いも類などであった。朝食や昼食では副菜を構成するこれらの食品の出現頻度が低く、夕食偏重の傾向が見られた。一般の若年者と同様、食や健康への意識は希薄であり、望ましい生活習慣も身についていないように思われる。【カリキュラムで重点をおく項目】学生の食生活の現状から、高齢者や障がい者の食生活を理解する前提として、まず、自分自身が健康であるための食事を理解する必要がある。一汁二菜の食事、食品の栄養的な特性・調理性、食品衛生、安全性、栄養成分表示などの項目を優先することが望ましいのではないかと思われる。
