项目摘要

目的本研究は幼児の発育発達状況に適応した効果的な食育の展開方法について、幼児を対象に、Kurt Lewinの集団力学的理論を栄養指導に導入し、食育を試みることを目的としている。成果本年度は、市内公立保育所2ヶ所の5,6歳の園児を対象(15人×2日間)に、クッキングを導入した食育を実践した。次の3点に重点をおき食育計画案を作成した。(1)自分の手で、指で材料にさわり、道具(包丁、麺棒、ナイフ等)を使って食品が料理へと変化していく様子を体験する。(2)食品の名前を知り、食品の味を覚える。(3)食品(大豆)の生育、加工・変化を知る。幼児の身長に合わせて、環境を整えレイアウトを考慮した。幼児の態度、反応の観察記録を行い、また食育実施後の日常生活について保護者、保育者の観察を通して、行動変容の実態調査を継続し、現在解析中である。食育の実践はビデオ収録後、DVD制作を完了した。また幼児の発育発達段階に適応した食育について既存の資料を収集して検討を行っている。食育の体験は、料理づくりへの関心、食品や食べ物への関心、食の楽しさがめばえることはもちろんのこと、幼児の健康状態、通園<出席>状況、朝食喫食習慣に反映し、健康的な生活習慣の確立の一助となった。本年度の調査研究のまとめを論文化し、来年度は、望ましい食生活の習慣化への行動変容の実態調査を継続実施する。発育発達に適応した栄養教育メディアとシステムを開発・構築することに繋がることが期待できる。
