Production of tailor-made starches in starch synthase-related double mutants and transgenic rice.

在高等植物中，至少有四类酶负责淀粉的生物合成。缺乏每一类特定同工酶的水稻突变体在胚乳中积累独特的淀粉。淀粉合成酶（Starch synthase， SS）具有最多的同工酶，可以延长淀粉的线性葡萄糖基链，并且每种同工酶都有不同的作用。在本研究中，产生了SS和其他类和转基因系的双突变体。它们的淀粉具有独特的物理化学性质，可用于工业规模的食品、食品和其他材料的生产。

At least four classes of enzymes responsible for starch biosynthesis in higher plants have been known. Rice mutants deficient in specific isozymes of each class accumulate unique starch in the endosperm. Starch synthase (SS), which elongate linear glucosyl-chains of starch, have the largest numbers of isozymes, and each SS isozyme has been suggested to play distinct roles. In this study, double mutants of SS and other classes and transgenic lines were produced. Their starches show unique physicochemical properties that are useful for production of food, foodstuffs, and other materials in industrial scale.
