本研究では、ベトナムにおける栄養士活動、学校給食の現状を把握するとともに、日本の学校給食システム（食育に関わる栄養士の活動含む）の知見を用いながら、ベトナムにおける応用可能性を検討する。「栄養士の関わる給食提供と食育活動が児童の健康課題に寄与する＝児童の健康アウトカムにつながる＝栄養士の活動の重要性を実証する」と考え、パイロットスタディの実施・評価によりその効果の実証することを目的として、「研究１：ベトナムにおける栄養士活動と学校給食に係る実態調査」と「研究2：日本の学校給食システム(食育に関わる栄養士の活動も含めた)の応用可能性検証」の構成で実施するものである。
