项目摘要

循環型フードシステムの動脈流通におけるバリューチェーンの構築に関する研究として、地域内循環の視点から、山形県庄内地域において、庄内産豚肉とその豚肉加工品に対する地域住民の購買行動と意識を明らかにした。山形県庄内地域は、養豚業が盛んで、食肉加工業者が集積しているので、対象地域とした。庄内産豚肉とその豚肉加工品を販売しているスーパーマーケットの利用者と考えられる半径1㎞圏内の一戸建て住宅の1,568世帯に配布し、244部を回収した（回収率15.6％）。普段購入している豚肉と豚肉加工品の原料豚肉の産地割合を合計10割で答えてもらったところ、豚肉では、庄内産4.8割、県内産1.4割、国産2.4割、外国産0.7割と、庄内産を購入している住民が多いという結果となった。一方、豚肉加工品については、庄内産2.2割、県内産1.0割、国産3.7割、外国産0.5割と、国産を購入している住民が多いという結果となった。地域外流通におけるバリューチェーン構築の視点から、山形県河北町のかほくイタリア野菜研究会を事例として、生産者とイタリア野菜の提供先である飲食店が価値共創を行っているのかどうかを明らかにした。価値共創の4つの要素による評価を行い、「対話」からは、調査した飲食店4店舗中3店舗が生産者の圃場を訪れたことがあるなど、生産者と飲食店との交流が見られた。「利用」からは、飲食店として、素性のわかる農産物を使っていることや生産者を応援していることを消費者に伝えられることに価値を見出していた。「リスク評価」からは、不作のリスクがあることを飲食店も理解し、欠品時は料理のメニュー変更などで対応していた。「透明性」からは、生産者の栽培計画がホームページで公開されており、飲食店はそれを仕入れの参考にしていた。以上の4つの要素から見て、かほくイタリア野菜研究会と飲食店は価値共創していると評価した。
