本研究課題では，情動状態が味知覚に影響を及ぼすメカニズムを心理学実験によって検討している。味知覚は，口腔内で味物質を受容し，それを認知的に処理することで生起する知覚である。令和４年度は，認知的処理段階における影響を検討するため２つの実験を実施した。実験１では，喚起された情動に対する内省が味知覚変化に及ぼす影響を検討するものであった。結果として，不安を喚起された際，その不安に対する内省の有無を問わず知覚される甘味強度は抑制されることが示された。一方，苦味知覚強度については喚起された不安に対する内省を行った場合のみ増強が見られ，不安喚起後に自身の情動状態ではなく性格特性を内省した場合にはその増強は示されなかった。この結果より，不安というネガティブな情動が苦味知覚に及ぼす影響は，内省のような高次の認知的処理を行う段階において起こる一方で，甘味知覚への影響は，それ以前の段階で起こることが示唆される。本実験において，塩味や酸味，味の好ましさについては，情動状態や内省の対象による有意な影響は見られなかった。実験２では，味覚を介さない味評価について，直前に意識した情動が及ぼす影響を検討した。具体的には，直前に意識された情動が，味覚ではなく視覚的な刺激である図形と味との関連の強さに及ぼす影響を検討した。結果として，直前にネガティブな情動を意識した場合にはポジティブな情動を意識した場合と比較して苦味（との関連）が強く評価されたが，甘味を含むその他の味質については，先行して意識する情動による影響は示されなかった。この結果は実験１の結果を支持するものであり，ネガティブな情動による苦味の増強が味物質を受容する段階を介さずとも起こることを示す。これらを総合すると，情動状態による味知覚への影響は味質によって異なるメカニズムによって起こる可能性が示唆される。
