昨年度は、新型コロナの影響が残り東南アジア諸国でのサンプリングはタイの1地点のみとなった。そのため、沖縄県内の泡盛酒造所からもろみをサンプリングし、泡盛製造に関与する微生物の菌叢解析を試みている。もろみ中に存在する微生物の中でも、本研究では麹菌（かび）、酵母、細菌（乳酸菌）に着目しており、それら全ての微生物を一度に解析できるよう前処理の条件を検討する必要がある。現在のところ、細菌（乳酸菌）の検出に成功しているが、酵母、かびの同時検出には至っていないため、異なる遺伝子抽出方法を行い、遺伝子解析結果を確認している。今年度は主に菌叢解析に必要な試薬の準備、および菌叢解析に必要な前処理の検討、もろみ及び蒸留酒の香気成分の分析など、本研究に必要な分析装置の調整を行い準備を整えた。また、私はこれまで東南アジア諸国の酒造所でのサンプリングを行った経験を持っているが、中国ではサンプリングの経験がないため、前校長、現熊本大学の伊原先生の紹介で中国の大学教員と繋がりを持ち、今後中国大陸（浙江省周辺）でのサンプリングの足掛かりにしたいと考えている。
