During digestion, many different processes work together to break down ingested food into nutrients that can be absorbed. A better understanding of the mechanisms involved would help to develop new, healthier food products. To gain this understanding, computer simulations of different digestive processes (the enzymatic breakdown of starch and transport across mucus layers) will be developed and used to study the mechanisms behind these processes.
