Milk-derived proteins represent important value-added products for the dairy industry as well as key ingredients in a large variety of dairy and non-dairy processed foods owing to their functional properties and nutritional value. With the rapid growth of the dietetic/health food and, more recently, the nutraceutical/functional food sector of the food industry, these ingredients find new applications in novel protein-fortified products and in nutraceutical/functional food and beverage products as sources of bioactive peptides that impart various health benefits.
