Cells are surrounded by membranes, thin sheets made up of a double layer of molecules that separate the inside of the cell from its environment. These molecules, lipids, have water-loving headgroups and oily tails, so that the membrane has an oil-like interior. Lung surfactant, a single layer of lipids, forms the interface between air and tissue in the lungs, with the tails pointing at the air.
