本文在分析了现有文献的基础上，介绍了用钼蓝比色法测定绿色辣椒中还原型维生素C含量的方法，确定了最大吸收波长和最佳工艺条件，在839 nm处有较强吸收，测定线性范围为0.004- 0.024 mg/mL，变异系数小于2.51%回收率为95.1%~ 96.7%。
In this paper,the method that the content of reduction-type type vitamin C in green pepperis determined with molybdenum blue colorimetry is introduced.The maximum of absorption wavelength and the optimum technical conditions are determined in the experiment.There is a strong absorption at 839nm.The linear range of determination is 0.004-0.024mg/mL.The coefficient of variation is less 2.51%.The recovery is 95.1%～96.7%.
