Moyer Farms has developed an innovative advanced oxidation process (AOP) that significantly reduces**microbiological biota on the surface of fruits and vegetables that can cause human disease and spoilage of**produce. This technique has the potential to protect human health along with increasing the shelf-life of fruits and**vegetables. The process also has the potential to reduce the concentration of pesticides that are often found on**the surface of fruits and vegetables. This project will investigate the ability of the AOP to reduce the concentration**of pesticides on the surface of fruits and vegetables. The project will also determine the transformation products**that are produced when pesticide residues are exposed to the AOP and whether these transformation products**pose a risk to human health. The project will also investigate parameters in the AOP that could be modified to**maximize the reduction of pesticide residues while minimizing the production of transformation products that may**pose a risk to human health and maintaining the inhibition of the microbial community. The proposed research**will identify whether the AOP can not only reduce consumers exposure to disease causing agents and increase the**shelf-life of produce but also reduce their exposure to pesticide residues.
