既知の運動性乳酸菌L. ghanensis JCM 15611T、L. nagelii JCM 12492T、L. vini JCM 14280Tおよび4種の試験化合物（2-フェネチルアルコール、メチオノール、イソブチルアルコール、プロピオン酸エチル）を用いて誘引剤が運動性に与える影響を調査するためリアルタイムPCRを用いた発現解析を行った。化合物の濃度により、運動性遺伝子の発現量が変化すること、各菌種で誘引効果のある化合物が異なることが示された。同様にアルコールが運動性に与える影響を調査したところ、L. ghanensis JCM 15611Tではエタノール濃度が上がるほど運動性遺伝子の発現量が増加した。一方、L. vini JCM14280Tは5%まで生育が可能であったが、運動性遺伝子の発現量が優位に減少した。PCRにより運動性乳酸菌の存在が推定されたワイン醪サンプルから誘引剤とマルチウェルプレート法を組み合わせ分離を試みた。80株の乳酸菌を分離し、そのうち25株が運動性を示した。16S rRNA遺伝子配列解析により3株は同定できなかったが、22株はL. nagelliと同定された。長野県および山梨県のブドウ発酵醪から分離されたSaccharomyces cerevisiae分離株についてInter-delta PCRによりUPGMA法でデンドログラムを作成し種内多様性を比較した。山梨分離株、長野分離株それぞれが固有のクラスターを形成しており、遺伝的多様性が分離した地域と密接に関係していることが示唆された。また、マスカット・ベーリーＡ果汁を用いて200 mL規模の小規模発酵試験を行い、酵母の地域差によるワイン成分への影響を調査した。これらの土着酵母は異なるワイン醸造学的特性を持つことがわかり、テロワールに寄与している可能性が認められた。
