これまでに、補綴歯科治療により栄養摂取が改善することが報告されているが、摂取したものすべてが生体内で作用しているわけではなく、その生体利用効率は咀嚼能力と大きく関与することが予想されているにもかかわらず、それを解明する研究はされていない。本研究では、施設入居高齢者における生体利用効率を解析し、補綴歯科治療の臨床栄養学的アウトカムを評価することを目的とした。しかし新型コロナウィルスの影響もあり高齢者施設での研究が困難であったため、研究対象者を施設入居高齢者から外来患者へ変更し、口腔機能と栄養摂取量や血中の骨代謝マーカーの関連について検討した。中でも、野菜や納豆などに含まれるビタミンKはその摂取量や吸収率が口腔機能の影響を受ける可能性があったため、ビタミンKの充足度のマーカーである低カルボキシル化オステオカルシン（ucOC）を主要なアウトカムとした。その結果、血清ucOC濃度を目的変数として解析したところ、ビタミンK摂取量と臼歯部機能歯数が有意な関連因子であることが明らかとなり、口腔機能が骨代謝に関連する可能性が示唆された。
