项目摘要

今年度はまず，日本における家庭のカーボンフットプリント（CF）の長期的（1990 年から 2020 年）変化を計算し，その間のCFの変化を，環境技術構造の変化，消費構造の変化，総消費量の変化の3つの要因に分解した。ここで，第1の要因はテクノロジーの変化であり，第2および第3の要因は消費者のライフスタイルの変化と考えられる。日本では，2010年代に入ってから光熱費と交通費に起因するCFが減少していることが明らかになった。これは先進国共通の現象として，家電製品の省エネ性能の向上や乗用車の電動化が急速に進んでいることを反映している。しかし食費に起因するCFは増加傾向を示していた。最近では，素材食品に比べてサプライチェーンが長いコンビニエンスフードの利用が進んでおり，そのことが食費のCF削減が難しくしていると考えられた。一方で適切なコンビニエンスフードの利用は調理労力の削減や食の豊かさの向上に貢献すると考えられることからコンビニエンスフードの利用について考察を深める必要があると考えられた。そこでコンビニエンスフードの利用に関連してアンケート調査を実施した。調査では，回答者の普通の日の3日分の夕食について，夕食の費用，夕食を食べた人数，メニュー数，調理のための加熱時間(電子レンジ/ガス/そのほか)，1食当たりごみの量(包材/食品ロス/厨芥)，22の食材カテゴリー別用いた食材数を質問した。さらにアンケート調査の回答結果を用いて，i番目の個人のn (n=1,2,3)日目の夕食について，一人当たり夕食の食材費，調理エネルギー消費(加熱時間とCO2排出量)，食材のカーボンフットプリント(CF) ，食品ロス等の発生量，および調理労力とコンビニエンスフードの利用強度の指標の作成を行った。
