项目摘要

本研究は、まず古代の食事を再現するのが第1の目的である。そのため文献史料から古代の食品を検証し、土器や動物骨などの遺跡出土遺物のコゲ・ススや解体痕を科学的に分析し、土器の器形や使用痕なども観察して、どのような食材をどのように調理したかを検証する。第2の目的として、再現された古代食の栄養価分析を行い、古代における食と生活習慣病の関係の解明を試みる。そのためにカンボジアや中国・韓国などの東ユーラシア東辺地域の食文化も比較検討することが目的である。本年度の研究実施計画は、まず①古代の炊飯法を平城宮跡出土のカラカマドや甕の分布から、強飯の再加熱を再現実験して検証した。また②土器内面に付着している白色物質の化学分析を進めると共に、古代の発酵食品の再現実験を行った。とくに『延喜式』にみえる古代の「醤」について再現実験を行っている。この計画については、須恵器の甕などのモデル土器の製作を岡山県寒風陶芸会館の協力の下に行い、それを使用した。③本年度の研究実施計画は多岐にわたるため、それを集約する形で、奈良県奈良市の西大寺食堂院跡から発掘調査によって明らかになった遺構・遺物から、古代の寺院での食生活に関するシンポジウムを行った。また昨年度より繰越したカンボジアなどの海外調査については、それに関する研究者を招聘して勉強会を開催した。しかし現在の新型コロナウイルス感染症の状況から十分な調査の実施は厳しいと思われるため、海外調査を断念してそれに替わる研究方法を考えていきたい。
