本研究では調理実習の授業を担当する教師に求められる多面的なスキルの様相を明らかにすることを目的として、実際の授業場面で求められる授業スキルと、授業運営の前提となる実習室の管理スキルについての検討を計画した。当初予定していた実習室管理の現状に関する質問紙調査はすでに実施済みであるが、実際の授業場面の観察に関しては新型コロナウイルス感染拡大の影響を受け、これまで同様の調理実習を実施することが難しい状況が続いている。今年度は代替策として、中学校家庭科の保育分野における教育実習生の授業を記録・分析した。幼児のおもちゃの製作を生徒に説明する場面において、実習生は事前に準備したプリントと口頭での説明に終始していたのに対し、指導教員がホワイトボードにその内容を図示する介入が見られた。また、発話をカテゴリーに分類すると、「説明」に偏っており、「応答」や「復唱」といった生徒とのやり取りを全体にフィードバックする発言は少なかった。授業運営の面で実習室の設備を活用する意識の低さや集団として授業の進行を調整する力の不足が感じられたが、データの少なさや実習題材の違いから十分な考察には至っていない。もう1点は、実習室の管理マニュアルを収集し、教科書の教師用指導書を含めて分析を試みた。マニュアルは教育委員会や教科研究会が作成したものを数点、入手することができた。実習時の安全を目的に編集されたものが主であったが、児童・生徒への安全指導だけでなく、日常の業務として家庭科の授業担当者が行うべき実習室の管理についても具体的かつ詳細に示されていた。さらに、学習効果をねらって掲示物の工夫や学習コーナーの設置に言及しているものがあることも確認できた。
